QotD: Your fantasy restaurant
If you could open any sort of restaurant, what would it be like?
I've always wanted to open an all-organic, relatively healthy roach coach taco truck. Fresh vegetables, Niman Ranch meats, that sort of thing. Here in Los Angeles, taco trucks are a dime a dozen, and some are very, very good - and while I'm not health-conscious enough to avoid patronizing them, I always think how nice it would be to know that my carnitas wasn't full of creepy antibiotics and growth hormones and stuff.
My healthy taco truck would offer three things: tacos, burritos, and something a la Chipotle's "Burrito Bol" - your choice of meats on a bed of lettuce. The corn tortillas would be organic white corn (non-GMO), the flour tortillas would be sugar-free and a whole grain alternative would be offered. The lettuce would be romaine or mesclun. And yeah, it deviates a bit from tradition, but I'd offer an entire salad bar of vegetables to throw into one's burrito if desired.
